The Highs and Lows of Working in a New Opening

We’ve been lucky enough to be involved with recruiting for some fantastic new openings this year.  Michael Caines' new venture Lympstone Manor is a stunning contemporary take on the country house hotel with great food at its heart and The Oxford Blue takes the food offering of a quintessential country pub to a whole new level.  There’s always a huge buzz around the opening of a new hotel or restaurant - press coverage, social media, launch events with celebs and local bigwigs. 

But what’s it really like to work at a new opening?

“Expect crazy hours” says our chef consultant Chris Fryer, who was part of the opening team at Cheltenham’s Ellenborough Park “It's a real buzz when you deliver a great service but at the start everything takes longer to do than expected as everyone is ironing out teething troubles, getting new processes in place and generally figuring out how everything works.”

David Almeida, our Food and Beverage Consultant says “It’s a great opportunity to really make your mark and influence how a new property develops. Processes aren’t set in stone, so people are open to you putting your ideas forward and making a contribution to getting things running smoothly.”

“There will be lots of staff turnover” says Alina Taslaca, our Front of House consultant “It’s very hard work, things aren’t always that organised and some people just can’t cope with that, so on the flip side, for those who can survive and thrive there is a real opportunity to progress quickly.”

“Shiny new equipment!” says chef consultant Josh Campbell “New openings generally mean new kit and good working conditions, this is great for all staff and chefs especially get excited by lots of new toys in a shiny new kitchen.”

In a new opening you will be working in the spotlight, expectations are high from managers, customers and the media. It’s a great opportunity to make a good impression -but the pressure is certainly on!

There’s no doubt that being part of a launch team is an exciting challenge, often plenty of fun and  a great thing to have on your cv – especially if the new property does well, but before you sign up for a job in a new opening or relaunch, weigh up the pros and cons and think carefully whether this is the right environment for you.

Lack of procedures and a need to think on your feet

Opportunity to shine in the spotlight

Lots of teething troubles, hitches and glitches
