This is another great opportunity for a senior sous, from a good fresh food background, to step up into a first head chef role.
The property, in a pretty village close Cirencester in South Gloucestershire, has a very strong reputation as a high quality food pub. The focus is on inventive and sophisticated use of local ingredients to produce outstanding flavours. Contemporary, seasonal and unfussy food is what we are aiming for.
Coming into this role your challenge will be to maintain and enhance the pub's reputation as a market leader in producing great, local produce led, food. You will need to be a real ingredient enthusiast, able to work creatively with what nature has to offer at any given time of year to produce great, crowd pleasing menu's.
The other must haves for this role are great organisational skills, strong team leadership and training skills and obviously attention to detail when it comes to compliance.
As head chef you will be leading a team of 7 to produce breakfast (the pub has rooms) lunch and dinner seven days a week. You are looking at around 100 covers a day (obviously with seasonal variations) and will need to maintain a GP of 70%.
It's an ideal first head chef job because, although this will be definitely be your own kitchen the property is part of a small group with other experienced head chefs and managers close by to lend support when needed.
