5 star Hotel in Sussex, with 2 Fine Dining restaurants (3 rosette and 2 rosette) and a beautiful tasting wine cellar is looking for a Head Sommelier to manage their wine operations. The main focus of the role is on their 2 rosette restaurant and tasting cellar. This is a very busy operation and we are looking for someone to embrace the project and make us even more successful? 

Head Sommelier. You will be heading up a tight-knit team of professionals, and you will be responsible for their training, development and standards of service for both restaurants. You will be hands on during service and the main point of contact for guests and hotel suppliers. You will also have the opportunity to host and develop wine tasting events in the cellar. This is a challenging role, and we are looking for the right candidate. Are you that person?

We are looking for a Sommelier with a WSET level 3 qualification and experience in fine dining operations. The right candidate must be a leader, a mentor with a professional and personable attitude, capable of embracing this exciting project. 

  • Up to £32,000 salary package
  • Support with WSET qualifications
  • 28 days holiday
  • Meals whilst on duty
