I lied - this is actually a head chef role, but with a very small kitchen brigade (3/4) and an owner manager who will take an active role in menu planning and budget management we are very keen to have a sous chef who is taking on their first head chef role.
This small property in the heart of the beautiful Wye Valley is under the new ownership and management of a very experienced luxury hotel professional. All produce is seasonal and sourced from a range of fantastic local suppliers.
The restaurant seats 60 and the short menu spans pub classics and more ambitious modern British dishes. T
The kitchen is small but very well equipped and there is also an outdoor wood fired oven.
In the job you will be working closely with the owner to develop and deliver and menu that creates a strong reputation for the property as a food led pub and puts plenty of bums on seats.
You will be working to understand the market, the available local produce and the opportunities and constraints these create for your cooking and your menu's
The ideal candidate for this role will be s sous chef from a quality, fresh food kitchen looking for their first head chef role. You will be able to manage and deliver and fast paced service, but not too posh to do a bit of pot wash when things are quiet.
You will probably have rosette experience, but gaining accolades should not be your focus for this job. You will have your own ideas about how to deliver a great, seasonal, local food pub menu, but be very open to working with an experienced owner/manager on menu development.
